In Japan, nori (Porphyra) is used in soups and to wrap sushi; agar-agar (kanten) is used as a gelatin substitute. In the Philippines, sea grapes (Caulerpa) and gusô (Eucheuma) are eaten, and gulaman made from agar and carrageenan is used in desserts.
